and im off Costa Rica 2013

in just two days I will be off in Costa Rica  the time has flown by I cant believe it I am so so excited to see where God will take the team and I as we travel down to Costa Rica for the short-term missions trip I am going with a group from my church to run a kids camp, build, gain fellowship, and just share the pure love of Christ! to see were God has taken me this past year is so unbelievably awesome. my life has been forever changed with the astonishing news that I am saved through the blood of Christ. my life is through Him and for Him and in all I do is for the glory of his righteous name! ahh so so happy  I wont be able to post while I am down there for the 2 weeks though do not fret I will be back and will report everything the team and I would love for prayers, prayers that we will be physically and emotionally ready for the trip and just to have a fun safe time!  God bless!

toasty home-made granola

in the steps of becoming a domestic goodness I have been wanting to make my own granola since its something that I love to enjoy all the time my goal is to make different kinds every other day to see which is my favorite  so if you have a granola craving come to the matthews house there will be tons  you can make granola with simply anything you have or like  this recipe is filled with things I found in my kitchen 3 cups of oats  2 cups of nuts/seeds of choice (I used almonds, peanuts, cashews, and sunflower seeds) 1 1/2 cups of assorted dried fruit (I used raisin melody and cranberries) 1/2 cup of melted coconut oil (or vegetable oil)  1/2 cup of organic blue agave (you can use honey or maple syrup) 1 tsp vanilla extract  4 tablespoons of brown sugar  3/4 teaspoon of cinnamon  ~preheat the oven to 300F ~line a baking sheet with parchment  ~combine the oats, nuts/seeds, and dried fruit  ~pour in oil and agave and stir  ~add in seasonings and vanil

sooooo im a dreamer, once I think of something I have to do it a while back I thought it would be so great to have my own graphic tee company of shirts that I make personally, consisted of photos I take only with my camera I wanted the logo to be an anchor and for it to slowly direct to one of my favorite verses Hebrews 6:19-20 "19  We have this hope as an anchor for the soul, firm and secure. It enters the inner sanctuary behind the curtain,   20  where Jesus, who went before us, has entered on our behalf.  He has become a high priest  forever, in the order of Melchizedek." An anchor for the soul, that without Jesus we are just randomly floating around, with Him as my Lord and first in my heart, I am secure. I have had this idea in my head for a while now and finally going to put them into action my best friends Hannah and Olivia are also in the game its just a fun side thing to do, why not right? we are just starting to make the shirts and take pictures

these past days have been filled with fun and no sleep this week was filled with slumber parties at the Hartmans Hannah's parents were out of town so to bring her company Olivia and I spent our days there and made her house our second home  one day we went out to Laguna for a little adventure  as always we have the greatest time if you heard a car going down PCH blasting Bop To The Top from High School Musical that was us and we are proud of it 

smoothies for days

one meal that I go crazy for are acai bowls they are a huge fad right now but I have loved them for years my family just bought the cool blenders that you see at jamba juice and I have been using it daily I like to make my own since I can put all my favorite things and add all my greens smoothies are the perfect meal to get your fruits, veggies and protein with no icky tasting protein powder. my favorite is to put granola filled with nuts and flax seeds. yummm here's one of the many recipes I love to blend up  blueberries pineapple mangos strawberries  cantaloupe tangerine spinach  kale  some honey  a cup of orange juice or cranberry topped with honey and granola

being anti social media is usually a good to bad thing good thing since that means I am out and about not on my computer or phone bad for my blog since well im not updating hehee so here's my life in a nutshell recently  ~summer school: currently I am in my nutrition class and we are having a two hour lecture on how you shouldn't eat raw meat... easy day which now you can see why its my only time to update the blog though I am really really enjoying my summer classes. They are Monday through Thursday at 7am to 11am. Which every time I say that people think im so strange for enjoying them, but I absolutely do! Speech and nutrition easy and fun, though my sleep pattern is way off due to being out past 10pm.. but its summer who can blame me? ~I am a new and working part time girl at Islands. I am pretty sure my favorite part of my job is getting half off the food there, its just so delicious. And talking with people, thats too fun for me. Though, very tedious, im
