one of my many fall favorites

when i have spare time on my hands i always take the chance to bake something for my family or friends. i just love love love baking. i have to admit im such a picky eater so its nice to have my family eat the treats i make. one thing that im really not a fan of are cupcakes. and you are probably going to say im crazy and weird cause homemade cupcakes are the best thing since iPhone, but due to my sensitive stomach problems gluten isnt my bff. there is so much craze on cupcakes lately, its the new trend almost. so coming to conclusion just because i dont eat cupcakes doesnt mean that i dont enjoy baking them and licking the batter off the spoons! 

though one magical day that all changed cause these cupcakes below are so mouth watering, i could eat a pan full if i could! hello world to Apple Spice Cupcakes

this cupcake recipe i came across on a blog I follow, Sallys Baking Addiction, are these delightful fall filled apple spice cupcake with salted caramel frosting. i think more the modest the cupcake is the more delightful it is. too much or too rich isnt something to crave in my case.



The cupcake itself is made with melted butter and brown sugar (YUM). Comforting flavors like nutmeg and cinnamon in each bite completes the perfect amount of fall spice. The same hints of the tart apples will just melt in your mouth. Apples and caramel are the classic fall combination. 


What I love most about these cupcakes are that there’s no mixer required! The cupcake batter and the frosting can be mixed together by hand.  They are SO easy




Apple Spice Cupcakes
makes 18 cupcakes
  • 2 eggs
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2/3 cup light brown sugar
  • 1/3 cup sugar
  • 1/3 cup milk (I used almond milk)
  • 1 Tbsp vanilla extract
  • 1 and 1/2 cups flour
  • 1/4 tsp baking powder
  • 1 tsp baking soda 
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 small apples, chopped into fine pieces (about 1.5 cups)
  • bake for 22-25 minutes at 350F degrees.
Salted Caramel Frosting
  • 1/2 cup (1 stick) salted butter
  • 1 cup dark brown sugar
  • 1/3 cup heavy cream
  • 1/4 tsp salt
  • 2-3 cups powdered sugar, sifted
